*An understanding of nutrition and health problems associated with food and diet.

4. Translation tasks (5%, optional): For non-English native speakers, who can translate WHO/FAO information into their mother language. English native speakers can translate useful information into English, such as food or nutrition guidelines written in Taiwanese Mandarin. If students are confident/positive/aggressive, we can publish open textbooks with ISBN. Thus, he or she will have book(s) before graduating. Meanwhile, the textbook (PDF files or paper) will be downloaded or circulated in his/her country.

Textbooks and materials

Open licensed materials will be used in this course, and that include documents from FAO and WHO, US, Australia, UK. Thus, students can get those documents for free and materials are legal to use.

一、活動宗旨：
為完備國人膳食營養相關基準研修基礎及制度，輔仁大學承接國民健康署「112-113 年研修國人膳食營養相關基準」計畫，邀請相關領域專家學者及實務工作之代表，針對國人膳食營養素參考攝取量(Dietary Reference Intakes; DRIs)、國民飲食指標、每日飲食指南等基準之研修重點及相關議題進行研討，綜整國際實證及政策作法、國內現況，期串聯國內外之學術資源，凝聚各界共識，爰舉辦本研討會；同時廣邀國內從事相關研究之專家學者、研究人員、研究生等，投稿分享其研究成果，並鼓勵年輕、新進學者踴躍參與國內營養基礎建設之工作。

二、主辦單位：衛生福利部國民健康署

三、承辦單位：輔仁大學學校財團法人輔仁大學

四、活動對象：DRIs、國民飲食指標、每日飲食指南等膳食營養基準議題相關之研究學者及團隊成員、相關實務工作者、各校相關系所師生、政府機關（構）、民間團體等。

二、壁報投稿須知
國民健康署為鼓勵國內外營養相關領域之專業人士交流分享我國國人膳食營養素參考攝取量(Dietary Reference Intakes; DRIs)、國民飲食指標、每日飲食指南相關等學術研究成果，以期促進我國膳食營養相關基準研修工作之人才培育及永續發展，爰委託輔仁大學辦理本研討會。

(一) 徵文範疇與主題：
1. DRIs研修相關國人膳食營養相關基準研究，例如攝取狀況、營養狀態、生化指標
等探討之主題。
2. 國民飲食指標、每日飲食指南相關：
(1) 各生命期營養問題之主題
(2) 健康促進、糧食安全之主題
(3) 疾病營養、慢性病預防之主題
(4) 營養教育、營養與健康識能、行為改變策略等之主題

(二) 投稿期限：即日起至112年10月20日止

(三) 申請方式：
1. 填寫「壁報摘要檢核表及同意書」，完成後需附上摘要以e-mail方式寄至指定信箱，請投稿者務必確認是否收到信箱發送之收件回條。
2. 壁報摘要請以word檔案撰寫存檔，其餘檔案型式不予接受。壁報摘要檔名請以服務單位或學校名稱加負責作者姓名之方式命名，副檔名為.doc（例如：輔仁大學王大明.doc）。

(四) 摘要格式：

2. 請以微軟Word軟體製作，純文字，避免使用任何格式指令與符號。中文以標楷體

或英文以Times New Roman打字，字形大小為12 pitch font。
3. 摘要內容應包括：標題、作者、機構/單位、研究背景、目的、實驗設計與方法、結果、結論，及關鍵詞（五個以內）；從研究背景到結論不分段。
(五) 檢閱期程：
1. 摘要格式及內容檢閱：112年10月20日至112年10月27日。
2. 摘要經承辦單位查閱，且符合研討會主旨後接受。如有疑問，承辦單位將洽詢負責作者。接受之摘要將於112年10月27日前，以電子郵件通知。
(六) 壁報展示：
1. 經承辦單位查閱接受之著作，請自行依規定尺寸印製海報，於研討會開始前20分鐘於會場指定位置完成海報張貼。
2. 海報請以直式，尺寸：841毫米x 1189毫米（A0大小）製作。
3. 展示之論文內容需包括標題、作者姓名及單位、前言、方法、結果圖表及結論等。

Statistics is a fundamental and powerful tool for business, social science, biology, and other fields. This course will cover some topics, including data descriptions, function plotting, data plotting, types of distribution, estimates, hypothesis tests, and regression. Group A 基礎型（80%）

及格要求只有兩個：1. 出席各自至少六次 2. 完成上台報告六次，每次 25 min (可以使用簡報軟體，阿原會提供食品檢驗分析相關的開放式英文教材或英文論文，學生可以使用軟體翻譯後，整理，進行報告)（簡報能力非常重要，但我們的課程設計，很少有機會讓大家整理資料製作成簡報檔案，以及上台練習，所以這課程要讓大家實際練習。）（同時鼓勵大家使用英文簡報，歡應）

*出席 (10% + 10%)：點名 A + B，各自至少出席六次才及格，單項點名達到六次就得 10 分。

I will try (but no guaranty) to prepare mock exams prior to the exams. Or you can check old exams and explanations to the questions on my YouTube channel

BUT, I DO NOT ENCOURAGE students using AI to solve exam questions. Students should learn skill and establish logic thinking to solve problems (as One Dollar expects. Not texts or numbers on the test paper. It makes no sense).

課堂作業：阿原會提早公布課堂作業，預計在課堂上留下適當時間讓學生寫作業。

從上學期的化學課程後，以及改完考卷，阿原想了很多，也自我檢討，似乎沒有放慢腳步，確定多數人可以理解內容，才往下繼續教。

本次有機化學，阿原會改變上課方式，減少內容，只講重點中的重點，未來本領域會用到的重點。同時留時間給大家在課堂上寫作業，著重大家可以消化吸收，而不是當老師的，把課程時間教好教滿。對於有興趣想要多投入有機化學的同學，請讓阿原知道，阿原會準備額外的作業。

評分方式（阿原部份沒有考試，占 33%，高老師部份 67%）：

1. 作業：選一個研討會，選一個主題，投稿摘要的格式，寫一篇摘要。

a. 研討會如食科年會營養年會或自己有興趣的領域（國外年會研討會也可以）

訓練項目：找研討會，找投稿摘要及細讀。選定題目（歡迎與阿原討論。建議走文獻整理的方式比較容易上手，而且這樣的技能很重要）、文獻分析、開始寫摘要（研究動機、研究方法、研究結果可以有圖或表、討論、結論）。列出引用資料，這很重要。

需要知道格式（每個研討會大原則相似，但細節不同）：字數、字型大小、字體、分段或不分段。

格式是最好學的，練習一次就會。同時要知道如何使用軟體。例如阿原與合作夥伴就使用 google office, 這樣不但可以進習共編，還可以有簡單的版本控制（版本控制與備份，可能是不起眼，但可能是重要的數位技能，沒事就沒事，萬一有狀況，若沒有備份，就會很慘，這些阿原不是從指導教授學到的，而多數是自己學，或是夥伴分享）

初步進入研究，寫摘要是種折磨，因為台灣高等教育不強調這一塊、社會風氣也不懂這一塊。簡單說，寫研究摘要，表面上是專業知識，骨子裡，是思考邏輯需要加強。專業知識很重要，思考邏輯更重要，這就像禪宗的教學法，要自己去體會、體悟。

建議主題：亞硝酸鹽與健康之文獻回顧、含鋁食品添加物（如某些泡打粉）與健康之關係、其他與本課程相關的主題。

2. 第六周（03/25）上台報告：每人 10 分鐘 (8 分鐘報告，2 分鐘問答)

重點：準備簡報的內容、說明簡報的內容、演講的音量、眼神看著聽眾、手勢等。歡迎使用英文進行簡報。

阿原會準備簡報筆（含雷射筆）、教學指揮棒、麥克風（手持/耳掛/領夾）。歡迎提早約時間來練習。

B. 如何回傳摘要？請在自己的 google 硬碟，開一個簡報檔或文字檔（鼓勵使用 google 簡報，編輯圖表比文字方便。然後設定與阿原共享，阿原的 email: iychiang1809@gmail.com 這部份不會公開，阿原會在第六周前完成修改及建議。）(請在第五周 3/20 週日 2100 完成，讓阿原有時間修改)

依照目前科學角度來看

1. 危害健康的項目不少，如空氣污染、遺傳、飲水、交通事故、職安事故等，飲食只是其中一項，而且飲食的任務不只提供足夠的熱量與營養素，是文化（如月餅、烤肉-1980年代之後、湯圓、粽子等），也是人與人的交流（交際應酬談生意、家庭時間、朋友聚會等），因此不能只用依照命理（如漢文化的生辰八字、西方占星術。不討論相不相信、不討論是否有科學證據）

我們嘗試不同的上課方式，不只技術與知識，思維、思考與批判，才是研究所最值得學的項目。

透過實作，來認識飲食與疾病

預計實作（這部份，是否修課的學生們願意分攤費用及協助採購？）

1. 科學研究指出，飲食中的鋁，可能造成人類生病。請問，種植茶，喝茶怎麼辦？含鋁的食品添加物有哪些？（其實我們已經吃很多鋁明礬類的食品添加物）

實作： a. 泡茶 b. 製作雞蛋糕（使用無鋁泡打粉。是真的有健康風險？還是行銷手法？）

2.世界衛生組織、國際癌症研究組織及學術單位等，把亞硝酸鹽/硝酸鹽列為致癌物（請問是哪個等級）

實作：預計製作香腸，分兩種，一種有添加亞硝酸鹽（添加量之計算，是阿原在大一的考試題目），另一種不添加。

3. 酒。國際癌症研究組織把酒列為第一類的致癌物質（請問如何查詢？相關資料），但除了宗教，多數國家沒有禁酒，這是為何？有研究指出，紅酒的多酚類化合物，對健康有幫助，請問，吃紅葡萄皮有用嗎？如果喝紅酒補充多酚類，會不會沒享受到好處，先酒精中毒？漢民族的黃酒（紹興酒、紅鹿酒等），據說有益健康，請問有科學證據嗎？我們透過文獻查詢，來認識酒，真的那麼嚴重嗎？

（餐飲系的目標是製作美食，讓顧客滿意）但我們食品營養領域同樣希望顧客滿意，但目標與駔法有些不同，我們透過食品營養成分的計算設計適合給一般人或病人的餐飲，同時盡量美味（需要結合烹飪的專長）。此外，大量的膳食製備，從服務一百人，到提供一萬人午餐的作法，也是本系的教學目標之一。
